It is classified Premier Grand Cru Classé “A”, the highest level in the Saint-Émilion classification. Pavie received this status in 2012, and it remained in the top category in the 2022 classification. \u003cspan class=\"contents\"\u003e\u003cspan class=\"\"\u003e\u003c\/span\u003e\u003c\/span\u003e\u003cspan class=\"PDq2pG_selectionAnchor\"\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThe estate is particularly interesting because of its exceptional south-facing terroir. The vineyard stretches across about 42 hectares and forms a natural amphitheatre of slopes and plateau. It is divided into three principal geological areas: the high limestone plateau, the Côte Pavie, and the lower part of the slope. The limestone plateau is especially important because it retains water during the dry summer months while allowing excellent drainage. This combination helps give Pavie both power and freshness. \u003cspan class=\"contents\"\u003e\u003cspan class=\"\"\u003e\u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThe vineyard is planted mainly with Merlot, Cabernet Franc and Cabernet Sauvignon. Today the approximate proportions are around 50% Merlot, 30% Cabernet Franc and 20% Cabernet Sauvignon, although the precise blend changes from vintage to vintage. The estate deliberately uses the different soils to match each grape variety to the place where it performs best. Merlot is particularly successful on the cooler limestone soils, Cabernet Franc on the Côte, and Cabernet Sauvignon on the warmer lower slopes. \u003cspan class=\"contents\"\u003e\u003cspan class=\"\"\u003e\u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThe modern history of Pavie is closely associated with Gérard and Chantal Perse, who acquired the château in 1998. Gérard Perse undertook a major restructuring of the vineyard and winemaking operation, including extensive replanting and a much more detailed division of the vineyard into individual parcels. This transformation was instrumental in Pavie reaching the highest classification in 2012. \u003cspan class=\"contents\"\u003e\u003cspan class=\"\"\u003e\u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eIn the cellar, Pavie is made with considerable attention to extraction and maturation. The grapes are hand-harvested and carefully sorted, fermentation takes place in temperature-controlled wooden vats, and malolactic fermentation occurs in barrels. The wine is generally aged for around 18 months, with a substantial proportion of new French oak. For example, the 2020 vintage was aged in 75% new oak and 25% one-year-old barrels. \u003cspan class=\"contents\"\u003e\u003cspan class=\"\"\u003e\u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThe resulting wine is typically deep, powerful and highly concentrated, with aromas and flavours of blackberries, black cherries, plum, violet, liquorice and spice, often accompanied by mineral and graphite-like notes. With age, it can develop more complex aromas of tobacco, leather, cedar, truffle and dried fruit. Its combination of richness, high concentration, firm tannins and freshness means that the best vintages can age for several decades.\u003c\/p\u003e\n\u003cp\u003ePavie has also had a somewhat controversial reputation among wine critics, particularly for some of the early vintages produced under the Perse regime, which were sometimes considered extremely powerful, ripe and heavily influenced by new oak. Over time, the style has become more refined, with greater emphasis on freshness, terroir and balance. The estate itself notes that Cabernet Sauvignon has increasingly been used in certain parcels to contribute freshness to the wine. \u003cspan class=\"contents\"\u003e\u003cspan class=\"\"\u003e\u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eOne of the fascinating things about Château Pavie is its longevity. A young Pavie can be almost overwhelming: dense fruit, substantial alcohol, powerful tannins and pronounced oak. With 10–20 years of bottle age, however, the components begin to integrate and the wine can become much more harmonious and complex. Exceptional vintages can continue developing for 30 years or more under good cellaring conditions.\u003c\/p\u003e\n\u003cp\u003eThe estate also produces Arômes de Pavie, its second wine. This is generally more approachable at a younger age than the Grand Vin, while still reflecting the character of the Pavie terroir. \u003cspan class=\"contents\"\u003e\u003cspan class=\"\"\u003e\u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eIn terms of history, the site has been associated with viticulture for many centuries. The name “Pavie” actually comes from the Pavie peach, which was historically cultivated in the area. The Romans planted vines in the Saint-Émilion region as early as the fourth century. Pavie became increasingly prominent during the nineteenth century, and the modern estate was consolidated in the early twentieth century.
