TASTING NOTES: I was served blind a white that blew my head off. It was the 2020 Arbois Blanc Les Tourillons from Renaud Bruyère and Adeline Houillon, which tasted blind felt like a superb Savagnin, but it turned out to be a blend of 80% Chardonnay and 20% Savagnin. Chardonnay is more neutral, but Savagnin has a strong character, and even in an 80/20 blend, it dominates the aromatics. Les Tourillons was the first vineyard they rented, and they must have had very good knowledge about it. This has great complexity, with notes of tangerine peel and white pepper, and it's vibrant and energetic, with precision and minerality, with a very chalky feeling in a style that reminded me of the Savagnin from Kenjiro Kagami or Allante-Boulanger. It comes in at 12.5% alcohol, with good ripeness and superb balance.

Bruyere et Houillon

About Bruyere et Houillon

Bruyère-Houillon is one of the most sought-after cult domaines in the Jura, located in the village of Pupillin, the historic heartland of Ploussard. Founded in 2011 by Renaud Bruyère and Adeline Houillon, the estate farms around 4–5 hectares of biodynamically tended vineyards spread across Pupillin, Arbois, and Montigny-lès-Arsures. Before starting their own domaine, both winemakers trained with Jura legends: Adeline worked alongside her brother Emmanuel Houillon at Maison Pierre Overnoy, while Renaud spent many years at Domaine Stéphane Tissot.

The domaine follows a philosophy of uncompromising low-intervention winemaking. The vineyards are farmed biodynamically without synthetic chemicals, fermentations occur with native yeasts, and the wines are bottled without fining, filtration, or added sulfur. Each parcel is vinified separately to preserve its individual character, resulting in wines that are remarkably pure, vibrant, and expressive of Jura's distinctive terroirs.

Production is exceptionally small, making the wines difficult to obtain. The range focuses on Jura's classic grape varieties—Chardonnay, Savagnin, Ploussard, and Trousseau—with standout cuvées including Chardonnay/Savagnin, Les Tourillons, and the highly regarded En Aspis bottlings of both Ploussard and Trousseau. The wines are known for their energy, crystalline minerality, bright acidity, and remarkable transparency, often combining citrus, orchard fruit, herbs, spice, and subtle savory notes with a long, saline finish.

Among collectors and sommeliers, Bruyère-Houillon is considered one of Jura's elite producers and is frequently mentioned alongside Domaine Labet, Jean-François Ganevat, Overnoy-Houillon, and Domaine des Miroirs. Despite their relatively young history, the domaine has earned an international reputation for producing some of the region's most compelling natural wines, with demand consistently exceeding supply.
