| TASTING NOTES: | I had a superb bottle of the 2020 Ploussard En Aspis from Bruyere - Houillon at the Bistrot des Claquets in Arbois and was really impressed. It was a bright ruby color and had a nuanced, perfumed, clean and elegant nose, as the wines have gained in purity and precision in the last few years. It was produced with grapes from clay Trias soils, handpicked and destemmed by hand with the traditional "crible" and fermented in a semi-carbonic maceration for 25 days. It was produced and bottled without any added sulfur, and the faint carbonic gas acts as a kind of preservative for the wine. It has contained ripeness and a moderate 12.74% alcohol, a light to medium body with very fine tannins and an ethereal and elegant quality to it. |
