TASTING NOTES:	Pierre-Yves Colin rents 4.4 hectares in Chevalier, and he and his team do the work in the vineyards themselves. In 2020 he began to pick on August 20th to preserve freshness. The wine was fermented in large casks without bâtonnage to produce this marvelous Chevalier with ripe, forward aromas of apricot and quince. The wine has all the richness of the Bâtard but more structure and better acidity that carries it to an impressive finish. Ripe and accessible, but still age-worthy.

About Domaine Pierre-Yves Colin-Morey

Pierre-Yves Colin-Morey is a highly regarded winemaker in Burgundy, France, known for crafting exceptional white wines, particularly from Chardonnay grapes. He comes from a prestigious winemaking family; his father is Marc Colin and his brother is Jean-Marc Colin. Pierre-Yves gained experience working alongside his father at Domaine Marc Colin before establishing his eponymous domaine in 2005.

Pierre-Yves Colin-Morey is renowned for his meticulous vineyard management and minimalist winemaking approach, which allows the terroir to express itself fully in the wines. He focuses on small yields and rigorous grape selection, often working with old-vine parcels in prime vineyard sites throughout Burgundy's Côte de Beaune and Côte de Nuits appellations, notably Saint-Aubin, Meursault and Montrachet.

One of the hallmarks of Pierre-Yves Colin-Morey's winemaking style is his use of oak barrels.
